How do you modify block?

Under the blocks menu I can add blocks to the page and edit text. How can I change a form block. The block only allows a form with First, Last & E-mail. I'd like to have all three and Phone #. I'm new to this drag and drop vs coding.

Also, is there a way to add more block and widgets to the Moto CMS template editor?
